This is a rich, soft, golden brioche-style loaf with a shiny crust and tender yellow crumb — exactly like the steaming bread in your photo. Honey adds gentle sweetness and keeps the loaf extra soft.
Ingredients (1 standard loaf)
Dough
- ½ cup (120 ml) warm whole milk (110°F / 43°C)
- 2¼ tsp (7 g) instant or active dry yeast
- 3 Tbsp (63 g) honey
- 3 large eggs, room temperature
- ½ cup (113 g) unsalted butter, softened and cut into pieces
- 3 cups (360 g) bread flour (preferred) or all-purpose flour
- 1 tsp salt
Egg wash
- 1 egg beaten with 1 Tbsp milk or water
Honey Butter Finish (optional but recommended)
- 2 Tbsp melted butter
- 1 Tbsp honey
Instructions
- Make the dough
In the bowl of a stand mixer, combine the warm milk, yeast, and a pinch of the honey. Let sit 5–10 minutes until foamy (if using active dry yeast).
Add the remaining honey, eggs, and about half the flour. Mix until combined.
With the mixer running on low-medium, add the softened butter a few pieces at a time until fully incorporated.
Add the remaining flour and salt. Knead on medium speed for 10–12 minutes until the dough is very smooth, elastic, and slightly sticky (it should pass the windowpane test). - First rise / chill
Place the dough in a greased bowl, cover, and let rise at room temperature for 1–1½ hours until doubled.
For the best flavor and easiest handling, refrigerate the dough for at least 4 hours or overnight (up to 24 hours). - Shape the loaf
Turn the cold dough out onto a lightly floured surface. Gently deflate and shape into a loaf (or divide into 3–6 equal pieces, shape into balls or short logs, and place them side-by-side in the pan for the rounded, joined top shown in the photo).
Place in a greased 9×5-inch or 8½×4½-inch loaf pan. - Second rise
Cover and let rise at room temperature for 1½–2 hours until the dough is puffy and has risen about 1 inch above the rim of the pan. - Bake
Preheat oven to 350°F (175°C).
Brush the top gently with egg wash.
Bake for 35–40 minutes until deep golden brown. Tent with foil after 20–25 minutes if the top is browning too quickly. Internal temperature should reach 190–195°F (88–90°C). - Finish
While the loaf is still hot, mix the melted butter and honey and brush it generously over the top for a shiny, flavorful crust.
Cool in the pan 10 minutes, then turn out onto a wire rack. Let cool at least 1 hour before slicing.

- Bread flour gives the best structure for this enriched dough.
- The long cold rest makes the dough easier to shape and improves flavor.
- Don’t rush the second rise — under-proofed brioche will be dense.
