A simple, crusty homemade loaf.
Ingredients
- 3¼ cups (410 g) bread flour
- 1½ cups (350 ml) warm water
- 2 tsp active dry yeast
- 1½ tsp salt
- 1 tsp olive oil (optional)
Instructions
- In a large bowl, mix the warm water, yeast, and olive oil (if using).
- Add the flour and salt. Stir until a shaggy dough forms.
- Cover and let rise for 1–2 hours, until doubled in size.
- Turn the dough out onto a floured surface and shape into a ball.
- Let rest for 30 minutes. Meanwhile, preheat the oven to 450°F (230°C) with a Dutch oven or baking stone inside.
- Score the top of the dough, then bake for 25–30 minutes until deep golden brown.
(If using a Dutch oven, bake covered for the first 20 minutes, then uncovered.) - Cool completely on a wire rack before slicing.
Tips
- For better flavor, let the dough rest longer (even overnight in the fridge).
- Steam helps create a crisp crust — use a Dutch oven or place a pan of hot water in the oven.
- Best eaten the same day.
Crusty outside, soft inside. Enjoy!
