Ingredients

For the dough:

  • 3½ cups (440 g) all-purpose flour
  • 2¼ teaspoons (1 packet / 7 g) instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup (240 ml) warm milk
  • ¼ cup (60 ml) warm water
  • 3 tablespoons unsalted butter, melted
  • 1 large egg

For the garlic butter:

  • ½ cup (115 g) unsalted butter, melted
  • 5–6 garlic cloves, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the cheese:

  • 2 cups (200 g) low-moisture mozzarella, shredded
  • ½ cup (50 g) Parmesan cheese, grated

Instructions

  1. Make the dough
    In a large bowl, combine flour, yeast, sugar, and salt. Add warm milk, warm water, melted butter, and egg. Mix until a soft dough forms. Knead for 6–8 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise for 45–60 minutes until doubled in size.
  2. Prepare garlic butter
    Mix melted butter, minced garlic, parsley, salt, and pepper. Set aside.
  3. Shape the bread
    Punch down the dough and divide into 18–20 equal pieces. Flatten each piece, place a small amount of mozzarella in the center, and roll into a ball. Dip each ball in the garlic butter and arrange them tightly in a greased 9×5-inch loaf pan. Sprinkle remaining cheese and any leftover garlic butter over the top.
  4. Second rise
    Cover and let rise for 25–30 minutes until puffy.
  5. Bake
    Preheat oven to 350°F (175°C). Bake for 28–32 minutes until deep golden brown. If the top browns too quickly, loosely cover with foil during the last 10 minutes.
  6. Finish
    Remove from oven. Immediately brush with a little extra garlic butter and sprinkle with more fresh parsley and Parmesan. Let cool for 5 minutes, then turn out onto a board and pull apart while hot.

Serve warm with a small bowl of extra garlic butter or marinara sauce on the side.
