Ingredients
For the Dough:
- Bread flour: 500g (approx. 4 cups)
- Warm water: 350ml (approx. 1 ½ cups)
- Instant yeast: 7g (1 packet)
- Honey or maple syrup: 1 tbsp
- Fine sea salt: 10g (approx. 2 tsp)
- Unsalted butter or olive oil: 2 tbsp (softened or melted)
Instructions
1. Mix & Knead
- In a large bowl or stand mixer, whisk warm water, honey, and instant yeast together. Let sit for 5 minutes until lightly frothy.
- Add bread flour, salt, and melted butter (or olive oil).
- Knead on medium speed for 8 to 10 minutes (or by hand for 12 minutes) until the dough becomes smooth, stretchy, and elastic.
2. First Rise
- Shape the dough into a ball and place it in a lightly greased bowl.
- Cover tightly with a damp cloth or plastic wrap and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
3. Shape the Loaf
- Punch down the dough and turn it out onto a lightly floured surface.
- Flatten into a rectangle, then fold the sides in and roll it up tightly into a log shape to create tight surface tension.
- Place the log seam-side down into a greased 9×5-inch metal loaf pan.
- Cover loosely and let rise for 45 to 60 minutes until the dough crowns about 1 inch above the rim of the pan.
4. Score & Bake
- Preheat your oven to 200°C (400°F).
- Using a razor blade or sharp knife, make 4–5 diagonal slashes across the top of the loaf.
- Bake for 30 to 35 minutes until the crust turns a deep golden brown and tapping the bottom produces a hollow sound.
- Turn the hot loaf out onto a wooden board. Allow it to cool for at least 15–20 minutes before slicing to reveal its soft, airy crumb.
